Chocolate Cherry Meringue Recipe

Ingredients
- 2 extra-large egg whites.
- Pinch cream of tartar.
- 6 tablespoons superfine sugar.
- 1½ tablespoons cocoa powder (not Dutch-processed).
- ½ cup dried cherries.
- ¼ cup chocolate chips.
Instructions
- To begin, position the oven racks in the upper and lower thirds of the oven. Preheat oven to 275°F (135°C).
- Make Meringue: In a very clean bowl, with the help of a hand mixer, beat the egg whites and cream of tartar until foamy. Keep beating the mixture while adding sugar one tablespoon at a time until it becomes glossy like marshmallows.
- Mix the Ingredients: Mix cocoa into the meringue, and then mix in the dried cherries, and chocolate chips.
- Make the meringues: Line two baking sheets with foil. Spoon meringue mix onto a baking sheet. Leave space between each meringue.
- Bake: Bake for 30 minutes. Change the positions of the baking sheets in the oven. Bake for another 30 minutes.
- Turn off the oven and let meringues sit in there for 1 hour. Remove and cool completely on baking racks.
- Keep in an airtight container for 3-4 days.
