This Honey-Thyme Vinaigrette is sweet and tangy with a lovely flavour from the thyme that makes it extra special. You can prepare it in no time and it can amp up any salad and boost any roasted vegetable dish.


Honey Thyme Vinaigrette


Ingredients 

  • ½ cup olive oil.
  • ¼ cup cider vinegar.
  • 1 medium shallot, halved.
  • 2 tablespoons honey.
  • 1 tablespoon fresh thyme leaves.
  • 1½ teaspoons Dijon-style mustard.
  • ⅛ teaspoon salt.
  • ⅛ teaspoon black pepper.


Instructions 

  1. Put in Other Ingredients: Add all ingredients but the olive oil to a food processor. Pulse 2–3 times to combine and finely chop shallot.
  2. While the food processor is running, slowly drizzle in olive oil through the feed tube in a steady stream until the dressing is thickened and well-emulsified.
  3. You can use the dressing immediately or transfer it to a jar and store in the refrigerator.  Shake well before using.
